Tuna And Olive Quick Pasta Sauce
- Olive oil
- 1 green or red sweet pepper, cut in small chunks
- 1 onion, roughly chopped
- 1 or 2 cloves garlic, minced
- 1 can diced (or stewed) tomatoes
- 1 can light or solid white tuna, drained
- 1 8 oz. can sliced mushrooms, drained (optional)
- 15 or so Spanish (or kalamata) olives, roughly chopped
- 4 oz. or so spaghetti or other pasta
- Grated parmesan or similar cheese
- Fresh ground pepper
- Heat a little olive oil large skillet. Add onion, pepper and garlic and saute, stirring occasionally until soft. Add tomatoes. Cook over med. low for about 15 minutes, stirring occasionally.
- Stir in drained tuna, breaking it up. Add mushrooms, if using. After it warms a bit, add olives. Stir and heat for about 1 minute.
- Serve over pasta, with grated cheese and fresh ground pepper.
