Quinoa Avial

  1. First, rinse the quinoa, with cold water several times. (this removes a bitter coating) Then add bullion and quinoa with 3 cups water and bring to a boil, cover, and reduce heat, let it simmer for 8 mins, then remove from heat and allow to sit 15 mins. When done, drain off access water and set aside.
  2. Second, dice squash, and steam in microwave for 3-4 mins till slightly tinder, set aside.
  3. Third, chop onions, mince garlic, dice tomatoes, slice peppers, and chop cilantro.
  4. Forth, heat (oil or butter) over med heat. Add garlic, and onions cook till they are translucent. Then add curry, and fenugreek and a tbs. of cilantro. Cook till the spices are very fragrant and the onions are browned. Add peppers and tomatoes, cook till the water from the veges is mostly gone. Add butternut squash, and remaining cilantro. Cook another 3 mins till tinder. Then stir in the agave or brown sugar, lime juice, and quinoa. Allow to sit for 5 mins off the heat. Then eat!
