Fresh Strawberry Yogurt Muffins
- 1 cup of yogurt (or 3/4 cup of yogurt and 1/4 cup of milk)
- 1 cup of sugar
- 2 cups of all purpose flouer
- 2 eggs, beaten
- 1/2 cup of unsalted butter, melted
- 1 teaspoon baking powder
- 1/2 teaspoon of nutmeg
- (can be sprinkled with cinnamon sugar poppy seeds, anything you can imagine)
- A handful of fresh strawberries (or more) washed, cut up into thin disks.
- 1. Mix the dry ingredients(if using gren tea powder skip the nutmeg)2. Beat the eggs the butter baking powder and the yogurt/milk to gether. 3. Mix the dry ingredients (flour, sugar, and the green tea) to the batter.4. Fold in the strawberries into the batter with a wooden spoon.5 Preheat the oven to 350 F. Scoop the batter into muffin molds lined with paper cups. Sift the cinnamon and sugar on top of each muffin. Cooking time is 35-45 minutes, but you should start paying attention after 30 mins. Always test your muffin by inserting a wooden toothpick, and if it comes out dry most likely they are ready.
