Stuffed Flounder
- 3 tablespoons butter
- 1/2 pound lump crab
- 1/4 cup minced onion
- 2 ribs celery - minced
- 1/2 green bell pepper - minced
- 2 cloves garlic - minced
- 2 tablespoon mayo
- 1 beaten egg
- 4 teaspoon lemon juice
- 1 teaspoon hot sauce
- 3/4 cup ritz crackers - crushed
- 1/4 teaspoon black pepper
- 1 1/2 pound flounder filets
- 1 lemon - thinly sliced
- 3 tablespoon melted butter
- 2 tablespoon parsley
- 1/4 teaspoon worcestshire sauce
- preheat oven to 350 - middle rack
- grease baking dish w/1/2 TB of butter
- In a medium skillet, melt the remaining 2 1/2 tablespoons of the butter over medium-high heat.
- Add onion & bell pepper & cook for 4 miunutes then add parsley & garlic for 1 more minute
- after cooling vegtables, mix w/crab, mayo, hot sauce,worcestshire, egg, lemon juice and 1/2C crackers
- lay out filets and pepper each one then place filling on and roll up
- In pan put lemon slice on each filet, top w/reamining crackers and drizzle with melted butter
- bake for 20 minutes
