Southern Pecan Loaf
- 3 c. plain flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 c. margarine, softened
- 1 1/2 c. sugar
- 4 eggs
- 3/4 c. milk
- 1 tsp. orange extract
- 1 tsp. almond extract
- 1 tsp. grated orange rind
- 1 c. finely chopped pecans
- In a mixing bowl, combine the flour, baking powder and salt. Cream the margarine and sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Add the flour alternately with the milk to the butter mixture, beating until smooth and well combined.
- Stir in the flavorings and orange rind, mixing well.
- Fold in pecans.
- Pour mixture into a greased and floured 9 x 5 x 3-inch loaf pan.
- Bake at 375u0b0 for about 50 minutes or until toothpick inserted in center comes out clean. Cool slightly; remove from pan.
