Lightbody Stew

  1. Brown meat in 1 tablespoon oil; add a few tablespoons flour and coat meat.
  2. Add spices, 2 cups hot water and 1 or 2 cups white wine; bring to a boil.
  3. Add potatoes, carrots, celery, tomato and onion; simmer 2 hours.
  4. Add remaining vegetables and simmer until tender.
  5. Add more liquid if needed.
  6. Keep vegetables covered in liquid.
