Marinated Tuna Appetizer

  1. DAY or TWO before serving:
  2. Drain tuna well, and break into chunks into a bowl
  3. Add thinly sliced english cucumber with skin intact
  4. Add thinly sliced red onion (or sweet white onion, such as mayan, or videllia
  5. pour in dressing until fairly moist
  6. Mix well, without breaking up chunks of tuna
  7. Mix occasionally during the day.
  8. To Serve: place in a pretty bowl on a plate.
  9. Surround with a variety of good quality crackers, crostini, and rye bread.
  10. Delicious...even people who don't like tuna love this dish.
  11. It is also great as a light summer lunch, served on a bed of butter lettuce.
