Tricia'S Soup
- 3-4 tspn Olive oil
- 2 cups chopped onion
- 2 cloves crushed garlic
- 2 cups sweet potato or winter squash
- 1/2 cup chopped celery
- 11/2 cup chopped tomatoes
- 3/4 cup chopped sweet pepper
- 1 1/2 cup cooked chickpea
- 2 cups vegetable stock or water
- 1 bag frozen veggies like peas
- 2tspn paprika
- 1tspn turmeric
- 1tspn basil
- 1tspn salt
- Dash cinnamon
- Dash cayenne
- 1 bay leaf
- 1 tspn tamari (soy sauce fine)
- Saute onion, garlic, celery, and sweet potato in oil for 5 minutes. Add the seasoning EXCEPT tamari. Add water. Simmer covered for 5 minutes. Add remaining vegetables and chickpeas. Simmer another 10 minutes or so until all veggies are cooked the way you like them.
- The veggies used are very flexible. Orange veggies can be combined w green ones, e.g., peas or green peas unstead of peppers. Carrots can be used instead or in addition to squash/sweet potatoes.
