Creamy Cauliflower Au Gratin
- 2 heads cauliflower, rinsed and cut into bite-size flowerettes
- 4 oz cream cheese- plain, or with chives or herbs
- 1/2 cup grated sharp cheese (pecorino, asiago or parmesan or a mixture)
- 1 tablespoon coarse mustard
- 1 tablespoon cumin
- 1 teaspoon dry mustard
- 1 teaspoon cayenne pepper
- 2 chopped green onions (scallions)
- 1/2 Serrano chili pepper, deseeded and finely chopped
- Heavy whipping cream to create desired consistency (1/2 to 3/4 cup)
- Salt and pepper to taste
- Cut apart cauliflower. Rinse. Boil in salted water for about 6-8 minutes.
- Drain.
- Combine cream cheese and remaining ingredients, use heavy cream to create creamy consistency that will coat cauliflower.
- Toss cauliflower with mixture. Place in buttered baking dish.
- Preheat oven to 350. Bake 20 minutes. Broil 10 minutes. Let rest 5 minutes before serving.
