Sweet Potato Bliss
- 2 medium Sweet Potatoes, peeled and cubed into bite sized pieces
- 1 medium onion, chopped
- 3 cloves garlic, smashed
- 3 Tbs olive oil
- 3 pats butter
- 2 Tbs salt free seasoning (Magic)
- salt and pepper
- Heat grill on high while preparing potatoes.
- In a large bowl add sweet potatoes, onions, garlic, 2 Tbs of the olive oil, seasoning and salt and pepper. Mix ensuring everything is coated with seasonings.
- Lay out 2 sheets of aluminum foil, one length wise, the other across it. Pour the remaining 1 Tbs of the olive oil onto the foil (to prevent the potatoes from sticking). Place the sweet potatoe mixture onto the foil. Place the pats of butter onto the pile of sweet potatoes. Make a foil packet by folding closed the first sheet of foil, then the other.
- Reduce the heat on the grill to low and place foil packet on the grill. Close the grill and let cook until potatoes are tender, about 20 minutes. Halfway through the cooking process flip the foil packets for even cooking.
- Remove from foil packets, place in a serving dish and serve immediately.
