Spicy Haddock
- 2 Haddock fillets
- 1/4 cup fresh grated parm cheese
- 2 tablespoons minced shallot
- 2 cloves of garlic minced
- 1 tablespoon portugese crushed hot peppers
- 1/2 tablespoon fresh cilantro chopped
- 1/4 cup mayo
- 1 tablespoon sour cream
- Salt and Pepper to taste
- 1/4 cup chicken broth or white wine
- Side sauce -
- 1 small diced tomato
- 1/2 cup small diced green pepper
- 1/2 cup scallions sliced thin
- 1 table spoon portugese hot peppers
- 1 cup diced yellow squash seeded
- Mix mayo, sour cream, 1/2 the cheese, the red peppers sauce, cilantro, shallots, garlic, salt and pepper. Spread evenly over both side of the fish. Place in bakng dish. Pour in broth or wine.
- Sprinkle the rest of the cheese on the top side of the fish. Bake at 375 for about 15 - 20 min until flaky. Do not over cook.
- Saute the side sauce and spoon over fish when ready
