Aunty Mandy'S Pumpkin Bread
- 2 Cups of Pumpkin
- 1/2 tsp of All Spice
- 1/2 tsp of Nutmeg
- 1/2 tsp of smashed cloves
- 3 tsp of Cinnamon
- 3 1/3 Cups Flour
- 3 Cups of Sugar
- 1 tsp of Salt
- 1 Cup of Cooking Oil
- 2/3 Cups of Water
- 4 Eggs
- 2 tsp of Baking Soda
- 1 Cup Chopped Pecans
- 1 Cup Raisins
- Preheat oven to 350 degrees F. In a large bowl, mix the first 8 ingredients. Add the oil, water, eggs and baking soda and stir until mixture is smooth (about 3 minutes). Fold in pecans and raisins with spatula. Once batter has been thoroughly mixed, disperse into 2 medium sized bread pans (each should be filled about 2/3 of the height of the pan). Bake in oven for approximately 60 minutes. Use a toothpick to ensure that bread is done. Immediately remove from bread pans & let cool.
