Oatmeal Apple Cake
- 1 c. oats (uncooked)
- 1 c. flour
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. ground allspice (cinnamon and nutmeg a good substitute)
- 1 c. sugar
- 1/2 c. oil
- 1 egg
- 1 tsp. vanilla
- 1 c. peeled, diced cooking apples
- 1/3 c. chopped walnuts (optional)
- Combine and set aside the first 5 ingredients.
- Combine and stir well the next 4 ingredients.
- Add sugar mixture to dry mixture.
- Add apples and nuts.
- If batter is much too thick, add a very small amount of water.
- Spread batter in a greased and floured 8-inch square dish.
- Bake at 350u0b0 for 45 minutes or until a toothpick comes out clean.
- Serve plain, with ice cream, or with cream cheese frosting.
- Double recipe for a 9 x 13-inch pan.
