Uncle Chris' Applesauce

  1. Using sweet eating apples (not green grannie smiths cause they don't fall apart in the cooking process) peel, core and slice 1 apple per every two people plus an extra apple or two.
  2. In a saucepan put a half cup of water and same amount of brown sugar. Make simple syrup then add apples. add little bit lemon juice for brightness and cinnamon and nutmeg to taste. let simmer and keep an eye on the liquidity. Add more water if too dry.
  3. When the apples break down, mash them or blend them depending on how smooth you want the sauce. I do half and half cause I like some of the pulpy homemade texture. Serve warm with extra cinnamon sprinkled on top.
