Mexican Roasted Cauliflower
- 1 head of cauliflower, cut into bite-sized pieces
- 1 red pepper, thinly sliced with seeds and ribs removed
- 1 poblano pepper, thinly sliced with seeds and ribs removed
- 1 medium sweet onion, cut in half and sliced
- Olive Oil
- Sea Salt
- Tbsp sugar
- 3-4 Peppadew peppers, chopped
- 1/2 cup shredded Queso Blanco (or another white cheese)
- Mix cauliflower with red and poblano pepper pieces in a baking dish. Drizzle with olive oil and season with sea salt. Place vegetables in the oven on the broiler setting, on the lower rack. Roast for about 10 minutes or until cauliflower starts to brown and has a few black tips. Remove from oven and turn hit to 350u0b0.
- While cauliflower is cooking, saute onions in a bit of olive oil until translucent. Take off the heat and sprinkle on sugar to caramelize. On top of cauliflower, layer on caramelized onions, peppadew peppers and cheese. Place in the oven for 5-10 minutes to heat through and melt cheese.
