Sweet Potato Pie
- 3 1/2 pound sweet potato's/yams (try to use smaller ones-the giant ones aren't as flavorful)
- 1 stick butter
- 1 1/2 cups light brown sugar
- 1/2 cup maple syrup
- 1/2 cut cinnamon
- 1/2 cups half n half or evaporated milk
- 3/4 cups Baily's Irish Cream
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- mini marshmallows
- Peel and quarter potatoes.
- Boil potatoes with water just above top of potatoes.
- Add maple syrup, brown sugar and 1/4 cup of cinnamon to water. Boil until potatoes are soft to almost falling apart.
- Drain potatoes and save 1 cup of the water you boiled them in.
- Return drained potatoes to hot pot.
- Hand mash, mixer and whip potatoes, adding all the rest of the ingredients except the marshmallows (taste while adding ingredients to adjust amounts accordingly).
- Turn heat on the lowest setting while whipping.
- Spread into piecrust and bake at 375 for aobut 1/2 hour.
- 5 minutes before serving melt marshmallow on top.
