Sweet Potato Pie

  1. Peel and quarter potatoes.
  2. Boil potatoes with water just above top of potatoes.
  3. Add maple syrup, brown sugar and 1/4 cup of cinnamon to water. Boil until potatoes are soft to almost falling apart.
  4. Drain potatoes and save 1 cup of the water you boiled them in.
  5. Return drained potatoes to hot pot.
  6. Hand mash, mixer and whip potatoes, adding all the rest of the ingredients except the marshmallows (taste while adding ingredients to adjust amounts accordingly).
  7. Turn heat on the lowest setting while whipping.
  8. Spread into piecrust and bake at 375 for aobut 1/2 hour.
  9. 5 minutes before serving melt marshmallow on top.
