Nancy Luthy'S Fix And Forget It Pork Chops And Rice
- 1 1/2 c. quick cooking rice
- 11 oz. can corn with sweet peppers
- 1 Tbsp. dried minced onion
- 10 3/4 oz. can low-fat cream of mushroom soup
- 1/2 tsp. paprika
- 1 Tbsp. melted margarine
- 1 1/3 c. water
- 1 medium carrot, shredded
- 1/2 tsp. thyme, crushed
- 4 pork chops (1/2-inch thick)
- 1/4 c. fine dry seasoned bread crumbs
- In saucepan, combine uncooked rice, water, undrained corn, carrot, onion and thyme.
- Bring to boiling.
- Stir in soup. Transfer mixture to 2-quart rectangular baking dish.
- Trim excess fat from chops.
- Sprinkle with salt and pepper.
- Arrange on rice and cover with foil.
- Bake at 375u0b0 for 15 minutes.
