Quesadilla Casserole
- 2 tsp. chili powder
- 1 tsp. gr. cumin
- 1 tsp. minced garlic
- 1/2 tsp. oregano leaves
- 1/2 tsp. crushed red pepper
- 1 lb gr beef
- 1/2 c chopped onion
- 2 can(8oz.ea)tomato sauce
- 1 can(15 oz)black beans drained & rinsed
- 1 can whole kernel corn, undrained
- 1 can (4 1/2oz)chopped gr. chilies undrained
- 6 flour tortillas (8inch)
- 2 cups shredded cheese
- Brown beef & onions in lg skillet on medium-high heat;drain. Add tomato sauce, beans, corn & green chilies, mix well. Stir in spices except red pepper. Bring to boil. Reduce heat to low; simmer 5 min. Add red pepper to taste.
- Spread 1/2 cup of beef mixture in bottom of 13x9x2-in baking dish sprayed with cooking spray. Top with 3 tortillas, overlapping as needed. Layer with 1/2 beef mixture and 1/2 of cheese. Repeat with remaining tortillas, beef mixture & cheese.
- Bake in preheated 350 deg. oven 15 minutes or until heated through. Let stand 5 min. before serving.
