Peanut Sauce (Spicy)
- 2 cups; coconut milk.
- 2 TBL; flaked sweet coconut.
- .25 cup; curry powder.
- 1.5 cups; chunky peanut butter (try to use organic brand without oil on top of new jars).
- 1.5 cups; heavy chicken stock.
- .25 cups; brown sugar; tightly packed.
- .25 cups; fresh lime juice.
- 1 tsp; Kosher salt.
- 1tsp; ground black pepper.
- In a 2-qt saucepan, bring coconut milk to low simmer. Fold in coconut flakes, curry powder, peanut butter, chicken stock, and sugar. Whisk thoroughly until mixture returns to low simmer. Continue cooking until contents are smooth (except for nuts); stir regularly.
- Remove from heat. While mixture is still hot, mix in lime juice, salt, and pepper.
- Cool to room temperature. Mix again thoroughly. Transfer to serving piece.
