Fresh Herb Pasta W/Grilled Chicken
- 2 boneless, skinless chicken breasts
- 1 Cup Italian Dressing
- 1 Box Fettucine
- 1T extra virgin olive oil
- 3 garlic cloves minced
- 1/2 Cup chopped green onion (white and green parts)
- 1/2 Cup chopped fresh basil
- 1/2 Cup extra virgin olive oil or taste
- Salt, pepper
- Marinate chicken breasts in italian dressing at least one hour, preferably overnight. Remove chicken from marinade, pat dry. Grill chicken until cooked through, cut into stips.
- Meanwhile, prepare pasta according to box. Drain pasta. In same pot with heat off, add 1T of olive oil and garlic, cook for 1 minute, add basil, onions and pasta, pour olive oil over and mix. Salt and pepper to taste Serve warm with chicken strips.
