Quick Minnestrone Soup
- 1 # lean gr. Beef or Turkey
- 1 med. Red onion, chopped
- 2 16 oz. cans whole or diced tomatoes
- 1 c. macaroni, uncooked
- 1 zucchini, diced
- 1 10 oz. pkg. frozen veggies that you like
- 1 16 oz can red kidney beans
- 3 T. red wine vinegar
- 1 t. oregano
- 1/2 t. each thyme and basil
- Garlic salt, salt & pepper to taste
- Parmesan or Romano cheese
- 2 quarts beef stock or 2 cans beef broth and 2 cans water
- Brown meat and onion together and drain off fat
- Add tomatoes and simmer about 15 minutes.
- Add broth & macaroni and bring to boil. Simmer 10 minutes.
- (If you are not going to serve immediately when done, cook the macaroni separately and add before serving)
- Add zucchini, veggies, kidney beans, vinegar and spices
- Simmer another 15 minutes.
- Sprinkle w/ cheese and serve
