Diabetic Date And Oat Bars
- 1/2 c. margarine
- 1 egg
- 1 tsp. vanilla
- 1 tsp. grated orange or lemon peel
- 1 1/3 c. pitted dates, chopped
- 1 c. regular oats
- 1/2 c. whole wheat flour
- 1/2 c. wheat germ or oat bran
- 1 tsp. baking powder
- 1/2 tsp. each: allspice, nutmeg and cinnamon
- 2/3 c. skim milk
- 1 c. chopped nuts
- Beat margarine and egg until creamy.
- Add vanilla, orange or lemon peel and chopped dates; mix well.
- Mix separately the oats, flour, wheat germ or oat bran, baking powder and spices.
- Add to oat mixture and margarine mixture.
- Alternate with skim milk, beating on low speed until well blended.
- Spread batter evenly into well-greased 10 x 15-inch cookie sheet or shallow rimmed pan. Sprinkle with finely chopped nuts.
- Press gently into batter. Bake at 350u0b0 for about 25 minutes or until center is firm.
- Cool. Makes 25 (2 x 3-inch) bars.
