Diabetic Date And Oat Bars

  1. Beat margarine and egg until creamy.
  2. Add vanilla, orange or lemon peel and chopped dates; mix well.
  3. Mix separately the oats, flour, wheat germ or oat bran, baking powder and spices.
  4. Add to oat mixture and margarine mixture.
  5. Alternate with skim milk, beating on low speed until well blended.
  6. Spread batter evenly into well-greased 10 x 15-inch cookie sheet or shallow rimmed pan. Sprinkle with finely chopped nuts.
  7. Press gently into batter. Bake at 350u0b0 for about 25 minutes or until center is firm.
  8. Cool. Makes 25 (2 x 3-inch) bars.
