Bow Tie Pasta Salad
- 1 lb. Bow tie pasta
- 1 bunch baby spinach leaves
- 1 pkg. grape or cherry tomatoes
- 1 Avacado, small cubes
- 1 small red onion, diced small
- 4-6 oz. Feta cheese, crumbled
- 1/2 c. chopped peanuts
- DRESSING:
- 1/2 c. olive oil
- 1/4 c. red wine vinegar
- 1 tsp. dried sweet basil
- 2 tsp. sugar
- 2 lrg. cloves garlic, minced
- 1/2 tsp. kosher salt
- 1/2 tsp. ground black pepper
- 1.In a large pot of salted water boil pasta according to package directions. Make sure they are not over cooked so they do not fall apart in your salad. Drain pasta well, then put into large bowl.
- 2.In a small bowl, whisk all ingredients for dressing.
- 3. Wash and pat dry spinach. Add onions, feta cheese, spinach, tomatoes, and peanuts to pasta. Add the avacado and dressing, right before serving.
