Fruited French Muffins
- 2 large eggs
- 1/3 c. orange juice
- 1 Tbsp. cinnamon-sugar
- 1/4 tsp. vanilla extract
- 4 English muffins, split and toasted
- 2 Tbsp. butter or margarine
- 2 c. assorted fruit: sliced kiwi fruit, strawberries, pineapple chunks
- 3/4 c. pourable apricot preserves
- In pie plate, whisk eggs, orange juice, cinnamon-sugar and vanilla.
- Add flour muffin halves; turn to coat both sides.
- In 12-inch skillet, over medium heat, melt 1 tablespoon butter. Place prepared muffin halves, cut side down, in skillet; cook until lightly browned on both sides, about 5 minutes.
- Repeat with remaining muffins, eggs mixture and margarine.
- Meanwhile, in medium bowl, toss fruit with preserves.
- Serve mixture over prepared muffins.
- Serves four.
