Fruited French Muffins

  1. In pie plate, whisk eggs, orange juice, cinnamon-sugar and vanilla.
  2. Add flour muffin halves; turn to coat both sides.
  3. In 12-inch skillet, over medium heat, melt 1 tablespoon butter. Place prepared muffin halves, cut side down, in skillet; cook until lightly browned on both sides, about 5 minutes.
  4. Repeat with remaining muffins, eggs mixture and margarine.
  5. Meanwhile, in medium bowl, toss fruit with preserves.
  6. Serve mixture over prepared muffins.
  7. Serves four.
