Oatmeal Flour Cookies Chocolate Chip

  1. 1 Before starting, grind enough oatmeal in the food processor to make the necessary 1 3/4 cups you will need to make these cookies! Or, if you're lucky enough to find Oat Flour, use that!
  2. 2 With electric mixer, blend butter with both sugars, egg and vanilla extract.
  3. 3 Add dry ingredients to mixture- blend well.
  4. 4 Stir in chocolate chips.
  5. 5 Spoon golf ball-size balls of mixture onto prepared cookie sheets (either use cooking spray or parchment paper).
  6. 6 Bake at 265 degrees for 23 minutes (yes, I know this sounds strange, but trust me, it works!).
  7. or 350 for 9-10 min. They make 2 dozen large cookies. I ended up baking them for 25 min. So depending on your oven 23-25 min.
