Wilted Celery Salad
- 1 stalk celery, seperated into ribs and washed
- 2 level tablespoons Dijon mustard
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- 2 tbsp wine vinegar
- 8 tbsp olive oil
- 1 tbsp chopped fresh tarragon OR 1 tsp dried tarragon
- crisp salad greens
- garnish-2tbsp chopped parsley or chopped hard-boiled egg
- remove tough strings from outer ribs of celery then slice the ribs rather fine- mix the mustard, salt, pepper, vinegar, and oil well, add the tarragon, and pour over the celery- toss extremely well, then cover with plastic wrap and leave at room temperature until ready to serve, shaking the bowl every now and then so the vinaigrette and celery mix well- line a salad bowl with greens, put the marinated celery in the bowl and sprinkle with chopped parsley or egg
