Dutch Babies
- 2 eggs (I warm in hot water)
- 1/2 c milk (micro 20 secs)
- 1/2 c flour
- 1 t vanilla
- pinch salt
- 2 T butter
- 2 T confectioners' sugar
- lemon slices
- 1. Place a 9" or 10" iron skillet (I use a pie plate) and preheat oven to 450 degrees.
- 2. In a medium bowl, whisk the eggs. Whisk in the milk and gradually whisk in the flour, salt, and vanilla.
- 3. When the oven reaches 450, remove the skillet and reduce the temperature to 400.
- 4. Melt 1 T of the butter in the skillet so that it is completely coated.
- 5. Pour the batter into the skillet and return to the oven for about 12 minutes (the baby will be puffed and lightly browned).
- 6. Slide the baby onto a dinner plate, melt the other T of butter on it, squeeze one or two wedges of lemon juice over it, and sprinkle with confectioners' sugar.
- 7. You could also use other topings like syrup, jam, fresh fruit, etc. (I think the fresh lemon w/ powdered sugar is the tastiest.)
