Dutch Babies

  1. 1. Place a 9" or 10" iron skillet (I use a pie plate) and preheat oven to 450 degrees.
  2. 2. In a medium bowl, whisk the eggs. Whisk in the milk and gradually whisk in the flour, salt, and vanilla.
  3. 3. When the oven reaches 450, remove the skillet and reduce the temperature to 400.
  4. 4. Melt 1 T of the butter in the skillet so that it is completely coated.
  5. 5. Pour the batter into the skillet and return to the oven for about 12 minutes (the baby will be puffed and lightly browned).
  6. 6. Slide the baby onto a dinner plate, melt the other T of butter on it, squeeze one or two wedges of lemon juice over it, and sprinkle with confectioners' sugar.
  7. 7. You could also use other topings like syrup, jam, fresh fruit, etc. (I think the fresh lemon w/ powdered sugar is the tastiest.)
