Pork Paprikash
- Vegetable cooking spray
- 1 1/2 pounds lean pork loin, cubed
- 1 medium onion, coarsely chopped
- 1 cup canned chicken broth
- 1 (10 3/4-ounce) can cream of mushroom soup, undiluted
- 2 teaspoons paprika
- 1/4 teaspoon salt
- 1/3 cup low-fat sour cream
- 3 cups cooked egg noodles
- 1) Coat a large skillet with cooking spray; place medium-high heat until hot. Add pork and onion; cook until pork is browned on all sides, stirring often. Add broth; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until pork is tender.
- 2) Add soup, paprika, and salt to skillet, stirring well; bring to a boil. Reduce heat, and simmer, uncovered, 10 minutes. Remove from heat; stir in sour cream. Serve over cooked noodles; sprinkle with parsley, if desired.
