Letty'S Black Beans
- 1 pound black beans
- 6 c. water
- 1/2 c. olive oil
- 1 tbsp. white or cider vinegar
- 1 onion
- 2 green bell peppers
- 3 garlic cloves
- 2 tsp. cumin
- 2 tsp. oregano
- 4 green olives
- 1 tbsp. sugar
- 3 to 4 bay leaves
- 3 tbsp. of ketchup
- salt to taste
- 1/4 c. chopped cilantro
- Leave beans to soak overnight in cold water covered with half of the onion and half of the green pepper.
- Bring 6 cups of water to a boil. Add beans (throw out the onion and green pepper that was left with the beans overnight). Simmer.
- While beans are simmering , roast the remaining green pepper til the skin is black. Remove the skin and cut into 1/2 inch strips.
- Saute the 1 garlic in olive oil until brown and the discard the garlic. then add the peppers, half of a chopped onion, bay leaves, olives, garlic, cumin, oregano and vinegar. Saute for 30 minutes over low flame.
- Add sauted ingredients to beans. Cook for approx 2 hours or longer., add salt and sugar, ketchup and top of with cilantro.
- (to thicken sauce smash a few beans up against the pot).
