White Grape And Cucumber Gazpacho

  1. Put all but 4 grapes in metal bowl and put in freezer. Slice the 4 grapes in half
  2. and reserve for garnish.
  3. Tear bread in chunks, chop in food processor till fine crumbs. Then put them in
  4. the bowl of water.
  5. Toast almonds lightly (10 mins.) Set aside.
  6. Cut off cucumber ends; peel if you want; slice along with garlic, scallions and 1/4
  7. almonds. Add bread crumbs and cheese and blend well.
  8. Note: I needed to add a little more liquid because it was too thick.
  9. Add cucumbers, scallions, dill, milk, vinegar, and grapes from freezer. Process
  10. until pureed.
  11. Add oil, salt and pepper.
  12. Serve with remaining grapes, almonds and dill.
  13. Can add extra cucumber but the original is delicious too!
