Reese'S Peanut Butter Cup Oatmeal Cookies
- 1/2 c. oleo, softened
- 3/4 c. peanut butter
- 1/2 c. sugar
- 1/2 c. light brown sugar, packed
- 2 eggs
- 1 tsp. vanilla
- 1 c. plain flour
- 1/2 tsp. soda
- 1/4 tsp. salt
- 1 c. oats (quick cook or regular)
- In a large bowl beat oleo and peanut butter until light and fluffy.
- Add sugar, brown sugar, eggs and vanilla; beat well. Stir together flour, soda and salt; blend into peanut butter mixture.
- Stir in oats.
- Cover dough; refrigerate several hours, until firm enough to handle.
- Heat oven to 350u0b0.
- Shape dough into 1-inch balls.
- Place on ungreased cookie sheet.
- Bake 9 to 11 minutes or until almost set; cool 5 minutes.
- Remove wrappers from peanut butter cups and place on each cookie, pressing down gently. Remove from cookie sheet to wire rack.
- Cool completely.
- Yield: 4 dozen.
