Meal In One Bean Pot
- 1 lb. small dried lima beans
- Ham bone or 1 c. chopped cooked ham
- 3 c. frozen hash browns
- 1 (14 1/2 oz.) can Mexican style stewed tomatoes
- 2 Tbsp. butter or margarine
- 1/2 tsp. black pepper
- Salt, if needed
- Rinse beans, removing any pebbles, etc. that might be in the package.
- In soup pot, cover the beans with water and heat to a boil.
- Turn off heat and cover the pot for about 2 hours.
- Add ham bone and cook for about an hour.
- Remove the ham bone from beans. If there is any ham left on the bone, add it to the soup pot.
- If you are using chopped, cooked ham instead of the ham bone, add it at this time.
- Also add the hash browns, tomatoes, butter, and black pepper.
- Continue cooking over medium heat until beans are tender.
- This will probably take about 30 minutes.
- Taste and add salt, if needed.
