Portuguese Fish
- 1 large onion, sliced
- 3 tablespoons olive oil
- 2 bay leaves
- 2 garlic cloves, minced
- 1/2 teaspoon cumin
- 1/2 teaspoon pepper
- 1/2 teaspoon allspice
- 1 large can diced tomatoes
- 1 tablespoon chopped parsley
- 1 cup dry white wine
- 3/4 cup water with lemon juice to make 1 cup
- 1/2 teaspoon salt
- 2 pounds fish 1/2 to 3/4 thick fillets
- 4 lemon wedges
- In large frying pan saute onion in oil until soft; add bay leaves, garlic, tomatoes, parsley,wine, and salt. Simmer slowly uncovered.
- Place fish in the pan and spoon the mixture over the fish until fish is cooked. Place fish on serving platter.
- Cook tomato mixture until bubbly and pour over fish. Garnish with lemon wedges.
