Organic Beef Stew
- 1 1/2 pounds Organic Stewing Beef
- 1/4 cup Organic All Purpose Floor
- 3 tablespoons Vegetable Oil
- 27 ounces Can of Organic Diced Tomatos
- 2 cups Organic Beef Broth
- 1 teaspoon Black Pepper
- 3 Potatoes, peeled
- 3 Carrots, peeled
- 3 stalks Celery
- 3 Shallots, chopped
- 3 Bay Leaves
- 3 cloves Garlic, minced
- Mix beef, flour and pepper in a bag. Shake well to coat cubes.
- On medium heat, heat oil in a large pot. Brown beef cubes for 5 minutes, stirring occasionally.
- Add tomatos, beef broth, shallots, garlic and thyme. Mix all ingredients well and bring to a boil. Cover pot and cook on low heat fro 2 1/2 hours.
- Add potatoes, carrots, celery and bay leaves. Bring to a boil. REduce heat and cover. Simmer for approx. 45 minutes or until veggies are tender.
