Beer Stew
- 3 pounds stewing beef
- 1 tablespoon brown sugar
- 1 tablespoon vinegar
- 1 1/2 beef broth or water
- 8 slices bacon, cut in 1-inch pieces
- 5 large onions, cut in eighths
- 5 - 6 cloves garlic, coarsely chopped
- 2 teaspoons dry parsley
- leaves from 2 stalks of celery, chopped
- 1 teaspoon thyme
- 8 peppercorns (you can put them in a muslin bag, or dump them in the pot and take your chances!)
- 1 bottle beer (any type at all)
- 1. Preheat oven to 275F.
- 2. Brown meat in frying pan.
- 3. Mix sugar and vinegar into the broth (or water).
- 4. Put all ingredients except the beer, and including the drippings from the frying pan, into a 6-quart casserole dish (or slow cooker).
- 5. Pour beer over top. Pour it slowly, so it doesn't froth up over the sides. Stir gently.
- 6. Cover and cook at 275F for at least four hours, or, for the crockpot, on low for 6 - 8 hours.
