Easy Breezy Butter Tarts
- 2 Cups Wondra Flour
- 1 C Powdered Sugar
- 1 3/4 sticks softened butter
- 1 pkg. vanilla sugar
- 2 egg yolks
- 1 tsp baking powder
- Favorite jam or jelly such as Raspberry or Current
- 1. Mix all ingredients with hands until crumbly. Form into 2 flat rounds and refrigerate for 20 minutes.
- 2. Flour wax paper or silpat, dough round and rolling pin. Roll out until about 1/8 to 1/4 in thick.
- 3. Cut out shapes with cookie cutter. Make a small hole in the center of 1/2 the cookies so that the jam shows through.
- 4. Bake for 6-9 minutes at 350 degrees. ( The smaller the cookie cutter the shorter the time).
- 5. Cool cookies and coat one 1 with jam, current jelly and place other cookie on top.
- 6. Sprinkle with powdered sugar.
