Mom'S Chuck Roast
- 1 chuck roast about 3 lbs
- 2 tbsp garlic powder
- 1 pkt Sazon
- 1 onion, sliced
- 1 green bell pepper cut into strips
- 1 bay leaf
- 1/2 tsp cumin
- 2 pkts Sazon
- 1 can chopped tomatoes
- 1 can roasted chopped tomatoes
- 1 can pimentos
- 1 cup vino seco
- In a blender, puree the tomatoes and pimentos.
- rub the garlic powder and 1 pkt Sazon into the meat.
- Add some olive oil to a dutch oven and brown the meat on all sides.
- Remove the meat (keep the oil and juice) and saute the onions and bell peppers.
- Add the vino seco.
- Add the tomato/pimento mixture.
- Add the 2 pkts Sazon, cumin and bay leaf.
- Return the meat to the dutch oven and cover with the sauce.
- Cook on medium low heat for at least three hours or until the meat is fork tender.
- If the sauce thickens too much, add more vino seco,
- NOT WATER.
