Thai Chicken Salad With Crispy Shallots And Garlic
- 1/2 cup thinly sliced shallots
- 1/2 cup thinly sliced garlic
- 1 lb grilled chicken or leftover pork, thinly sliced
- 1 cup coarsely shredded carrot
- cherry or grape tomatoes, halved
- 1 cup thilnly sliced red onion
- 1 cup fresh cilantro leaves
- 1/2 cup frersh mint leaves
- 2 heads butter lettucve
- 1 recipe Thai salad dressing:
- -1/2 cup fresh lime juice
- -21/2 T. fish sauce (Nam Pla)
- -31/2 T brown sugar or maple syrup
- -2 small dried thai chilies or thinly sliced serranos
- -1 large clove garlic, crushed
- Dry-reasted chopped peanuts for garnish.
- Whisk dressing ingredients together in a small bowl.
- In a small skillet, heat 1 cup of oil until hot but not smoking, and fry shallots until crisp and golden, 1-2 minutes. Drain on paper towels.
- Fry garlic in 2 batches until crisp and golden about 1 minute.
- Drain on paper towels.
- In a loarge bowl, toss together pork or chicken, carrot, tomatoes, onion, cilantro and mint. Add 1/2 cup of dressing and toss.
- Line a platter with lettuce and arrange meat mixture on top. Sprinkle with fried shallots and garlilc and garnish with peanuts. Serve remaining dressing on the side.
