Thai Chicken Salad With Crispy Shallots And Garlic

  1. Whisk dressing ingredients together in a small bowl.
  2. In a small skillet, heat 1 cup of oil until hot but not smoking, and fry shallots until crisp and golden, 1-2 minutes. Drain on paper towels.
  3. Fry garlic in 2 batches until crisp and golden about 1 minute.
  4. Drain on paper towels.
  5. In a loarge bowl, toss together pork or chicken, carrot, tomatoes, onion, cilantro and mint. Add 1/2 cup of dressing and toss.
  6. Line a platter with lettuce and arrange meat mixture on top. Sprinkle with fried shallots and garlilc and garnish with peanuts. Serve remaining dressing on the side.
  7. Serves 6
