Popped Amaranth Foccacia
- 1 cup warm water (110 degrees)
- 3 Tbsp. Saf-Instant Yeast
- 1 cup sourdough starter
- 3 Tbsp. sugar
- 2 cups bread flour
- 1 cup popped amaranth
- 1 Tbsp salt
- 2 Tbsp. olive oil
- 2 cups cool water (75 degrees)
- all purpose flour
- rosemary
- kosher salt
- Combine warm water and yeast. Let set for 3 minutes, then add sourdough starter, sugar and bread flour. Mix for 30 seconds. Let sponge for 10 minutes, then add amaranth, salt, olive oil, cool water. While mixer is running, gradually add all purpose white flour until dough pulls away from sides of bowl. Mix for 6 minutes. Roll out and place on parchment-lined paddle. let rise. Make finger wells in dough and brush with olive oil and sprinkle with rosemary and kosher salt
- Bake on preheated 500 degree pizza stone for 7-10 minutes.
