Szechwan Pork Shanks With A Matchstick Salad And Chinese Mustard:

  1. Method for Matchstick Vegetables:
  2. Wash all vegetables. Finely julienne all vegetables and cut into 3 inch pieces. Flash them in a hot saute pan with olive oil just too slightly wilt and season with fresh cracked pepper and sea salt. In the center of the plate arrange vegetables in a pyramid and drizzle Chinese mustard just for flavor.
  3. Method for Pork Shank Marinade:
  4. Combine all ingredients in food processor until well blended. Coat with marinade and
  5. cover and chill for 20 minutes. Reserve some marinade for glazing and garnishing.
  6. Method for Chinese Mustard:
  7. Over double boiler, whisk sugar and mustard powder together, when it's combined whisk in egg yolks and red wine vinegar. Stir occasionally until thickened and remove and cool. Once cool, fold in Creme Fraiche
