Golden Sausage Casserole
- 1 lb. smoked sausage or Polish sausage, sliced
- 1 c. chopped onion
- 1/2 medium head cabbage, shredded (about 5 c.)
- 1/2 c. water
- 2 golden Delicious apples
- 1/4 c. packed brown sugar
- 1/4 c. vinegar
- 1/4 tsp. dry mustard or 1 tsp. prepared mustard
- 1/8 tsp. pepper
- Brown sausage in skillet; drain.
- Saute onion in 2 tablespoons butter until golden.
- Add cabbage and water.
- Cover and cook for 7 to 8 minutes; drain.
- Core and chop 1 apple.
- Combine with sausage and cabbage.
- Turn into 1-quart casserole.
- Core and slice remaining apple and arrange over casserole.
- Combine brown sugar, vinegar, mustard, pepper and 1 tablespoon melted butter and pour over casserole.
- Bake covered at 375u0b0 for 30 to 40 minutes. Makes 4 to 6 servings.
