Judy'S Delicious Spinach
- 3 (10 oz.) pkg. frozen chopped spinach
- 4 Tbsp. butter or margarine
- 3 Tbsp. flour
- 1 c. milk
- 1 tsp. fancy mustard
- 1/4 to 1/2 c. grated white cheese (Muenster, Havarti, Cheddar, Brick or Swiss)
- 1/4 to 1/2 c. Parmesan cheese
- Cook spinach in small amount of boiling salted water; drain thoroughly.
- Preheat oven to 350u0b0.
- Melt butter in medium, flameproof baking dish.
- Turn off heat and stir in flour into butter until it forms a roux.
- Turn heat onto low flame; add milk gradually, stirring continually until sauce thickens.
- Add more milk if necessary.
- Add mustard, grated white cheese and Parmesan slowly, stirring continually until smooth.
- Add spinach; mix thoroughly.
- Sprinkle
- top with more Parmesan cheese.
- Bake uncovered for 20 minutes.
