Judy'S Delicious Spinach

  1. Cook spinach in small amount of boiling salted water; drain thoroughly.
  2. Preheat oven to 350u0b0.
  3. Melt butter in medium, flameproof baking dish.
  4. Turn off heat and stir in flour into butter until it forms a roux.
  5. Turn heat onto low flame; add milk gradually, stirring continually until sauce thickens.
  6. Add more milk if necessary.
  7. Add mustard, grated white cheese and Parmesan slowly, stirring continually until smooth.
  8. Add spinach; mix thoroughly.
  9. Sprinkle
  10. top with more Parmesan cheese.
  11. Bake uncovered for 20 minutes.
