Vegetable Chowder
- 1/2 c chopped red pepper
- 1/2 c chopped onion
- 1 c chopped celery
- 1 c chopped cauliflower
- 1 c diced carrots
- 1 c chopped broccoli
- (you can use frozen vegetables instead of all of fresh ones)
- 1/4 c margarine / butter
- 3 c water
- 3 cubes vegetable bouillon
- 1/2 c flour
- 1 Tbl chopped parsley
- 3 c shredded cheddar cheese
- salt & pepper
- 1,5 c milk
- saute the pepper & onion in margarine / butter until tender
- add remaining veggies, water, bouillon cubes, salt & pepper. bring to a boil and simmer covered for 20 min.
- combine flour & milk. stir and bring to a boil to cook for 2 minutes (keep stirring)
- mix in parsley. add in the cheese just before serving.
