Egg On Potato Slices
- 6 large potatoes
- 4 Eggs 1 or 2 eggs per person
- 3 tablespoons oil, or Clarified Butter or Ghee
- 2 green Chillies
- a small bunch of chopped Cilantro
- Slice the potatoes into medium slices and immerse in cold water.
- Drain, dry and place into a large flat pan where the oilor butter is already hot . Toss the slices of potatoes around till they get coated with the oil/fat
- Now allow them to cook in the pan without disturbing the potatoes. Turn the heat down. Cover the pan and allow the potatoes to cook. Once cooked break the eggs on the potatoes gently not to close to each other. Sprinkle with salt, chopped chillies and cilantro. Cook the egg as desired. If you want the egg loose, then watch carefully till you see the egg forming into a firm form. If you want the egg completely hard then a bit longer.
- Slide it on to a large platter and cut around each egg.Serve at once.
