Parmesan Fried Tilapia W/ Garlic-Tomato-Basil Butter
- 1/2 cup flour
- 1/4 tsp salt
- 1/2 tsp pepper
- 1/4 cup Parmesan, grated
- 1/4 cup dry bread crumbs
- 2 eggs, beaten
- 1/4 cup butter
- 1/4 cup olive oil
- 1 lb tilapia fillets
- Prepare butter separately (see: http://www.epicurious.com/recipes/member/views/1259037)
- Use three bowls for dredging
- Combine flour, salt, and pepper in first bowl
- Combine Parmesan and breadcrumbs in second bowl
- Place beaten eggs in third bowl
- Heat butter and oil in large skillet
- In order, dredge fish in seasoned flour, then egg, then Parmesan and breadcrumb mix
- Sautee over medium heat for 2 min each side or until done
- Place on serving dish and immediately place garlic-tomato-basil butter on top of each fillet so that butter melts on top
- Delish!
