Grilled Tilapia With Cilantro Sauce & Black Bean Cornfetti
- tilapia sauce/marinade
- (Note these are rough approximations; I don't measure.)
- 2 tilapia filets
- 1 clove fresh garlic minced
- juice of 1 lime (or 2 Tbsp)
- 2 Tbsp orange juice
- 2 Tbsp Olive Oil
- 3 Tbsp fresh chopped cilantro
- 1/2 chopped jalapeno
- dash of cumin
- 1/2 tsp Toni Chacheri's seasoning
- fresh cracked black pepper
- pepper to taste
- black bean cornfetti
- 1 can black beans rinsed
- 3 ears fresh white corn, cut corn off the ears
- 1/2 medium onion chopped
- 1/2 jalapeno chopped
- 1 avacado
- salt & pepper to taste
- olive oil
- dash cumin
- 1 tbsp chopped cilantro
- set fish aside on a plate and mix other marinade other ingredients to taste
- pour half of the marinade/sauce over filets and marinade 30 minutes to an hour
- grill over medium to high heat on foil (spray w/oil)
- serve w/remainder of marinade as a sauce
- While grill is heating, sautee onion in a Tsp olive oil for 5 mins then add jalapeno & corn and sautee until cooked. Season w/salt & pepper. top w/diced avacado and cilantro once you put it on plates beside the fish
- add grilled tilapia to plates and top with the remaining sauce
