Mexicn Bean Dip

• 1 small minced onion
• 2 cans pinto (or other white)
• beans.
• 3 tbs salsa
• 2 tbs tomato puree
• 2 tbs taco seasoning
• 1 tsp salt
• 1 tsp sugar
• 1 tsp cayenne pepper
• 8-10 oz sour cream
• 3 tbs cream cheese
• Shredded sharp cheddar cheese
• Small green pepper, small tomato, small red onion, scallions

1. 1st layer -
2. Drizzle small amount of oil in saucepan, add chopped onion & brown lightly. Add beans,salsa,puree,taco seas. salr,sugar, cayenne pepper. Mash until smooth. Spread on bottom of casserole dish & let cool completely.
3. LAYER 2
4. Combine sour cream & cream cheese.
5. Mix until smooth, spread over bean mixture.
6. LAYER 3
7. Sprinkle layer of shredded cheddar cheese
8. LAYER 4
9. Chop into small pieces -green pepper, tomato, red onion,scallions. Cover the cheese layer with the veggies.
10. Cover casserole & chill.
