Oriental Chicken Salad
- 2 packages uncooked raman noodles
- 1/2 cup sliced almonds
- 2 TB sesame seeds
- 1/4 cup butter
- DRESSING INGREDIENTS
- 1/2 cup sugar
- 1/4 cup white vinegar
- 3/4 cup vegetable oil
- 2 TB soy sauce
- 1 lb sliced cooked chicken
- l head red leaf lettuce
- 1 package coleslaw mix
- 2 green onions sliced
- Melt butter and add ramen noodles broken into small pieces. Add almonds and seeds. Brown and set aside.
- Mix 1/2 cup sugar, 1/4 cup vinegar, 3/4 cup vegetable oil, 2 TB soy sauce in saute pan and bring to a boil for 1 -2 minutes stirring often. Place in lidded container and refrigerate for 1 hour. Shake will before using.
- Slice chicken breasts and saute in olive oil. Set aside.
- Break up head of leaf lettuce - mix 1/4 leaf lettuce, add 1/4 package of coleslaw - add 1/4 crunchy noodle mixture into lettuce - continue adding 1/4 at a time until all ingredients are gone. Add cooked chicken and toss.
- Add salad dressing and toss. Serve immediately (so noodles don't get soggy).
