Parsley & Mint Meatballs & Agiorgitiko Boutari
- 1 lb (500g) ground beef, extra lean
- 1/2 yellow onion, minced
- 1/2 cup each, fresh parsley & mint, chopped
- 1/2 cup fresh bread crumbs
- 1 egg
- 1 tbsp yellow mustard
- 1 tbsp fresh lemon juice
- 1 tbsp oregano, dried
- 1/2 tsp salt
- Pepper, as desired
- Combine ingredients in a large bowl and mix thoroughly with hands. Let mixture sit in refrigerator for at least an hour. Shape meat into bite-sized balls and place on lightly greased baking sheet. Place in preheated oven 450F (230 C) for 15-20 minutes until brown and cooked through. Serve.
