Spelt, Kamut And Millet Bread Made With Barley Water
- 2 c barley water, lukewarm
- 2 c spelt flour
- 1 c kamut flour
- 1 c millet flour
- 1-1 1/2 c white bread flour
- 2 T gluten
- 2 T honey
- 2 1/4 tsp salt
- 3 T butter, melted
- 2 1/2 yeast
- Mix barley water, honey, and melted butter and dissolve yeast in it. Mix flours, gluten and salt and add to liquid, mixing until too stiff to turn. Turn onto board and mix in remaining flour then allow to rest 20 min. Then knead 12 min mixing in more white flour until the dough is tacky but workable. Rise 1 1/2- 2 hrs. Form two thick loaves and place on parchment paper rectangles. Rise 40-60 min while heating oven with tiles to 400. Slide loaves onto peel, spray with water and slash, then put on hot tiles. After 3 min, spray inside oven. After 7 min reduce heat to 350 and bake for total 30-40 min.
